YOUNG SOMMELIER COMPETITION
Dear Professional Members,
On April 20th, 2011, in Saint Petersburg, the National Bailliage of Chaine des Rotisseurs for the first time will hold the National stage of International competition “Young Sommelier 2011”.
The competition is organized by the Bailliage de Russie of Chaine des Rotisseurs together with Russian Sommelier Union and Wine School “ProSommelier”. The representatives of these organizations will form the jury of the competition.
The Chaine des Rotisseurs is the international gastronomic society dedicated to bringing together both professional and non-professional members worldwide, who appreciate and share a mutual interest in cuisine, wine and fine dining. The Bailliage de Russie was established in St Petersburg in the end of 2002. Worldwide there are more than 40 000 members. Among the members of the Chaine there are many famous high-ranking people, like the Queen of the Netherlands, Swedish Prince Gustav, Prince Albert of Monaco and many others.
The mission of our society is to enhance the development of knowledge and understanding of cuisine, wine and fine dining. The structure of our organization allows the participation of both professionals and non professionals and sets a goal in assisting, rewarding and supporting young professionals, who have a chance to become the best in their professional sphere.
The “Young Sommelier 2011” competition contributes to distribution of expertise knowledge on wine and crafted beverages among young professionals and is aimed to reward their professional skills.
To compete, the sommelier has to meet the following requirements:
- To be sponsored by a member of the Chaine
- Be interested in the wine and crafted beverages industry
- Be at least 21 and not more than 35 years of age on September 1st of the year in which the competition of held.
The International competition will take place in Greece in September 2011. To be able to compete for the title of «the best young sommelier 2011” at the international competition,
the candidate should successfully progress through tests conducted at the national level for selecting the best-qualified individual representing the country.
The participation of the national candidate at the international competition is financed by the Bailliage de Russie.
An individual may compete only three times at the National Finals and must complete the entire qualification and eligibility process each time.
The candidates send their applications for participation to the organizational committee and pay the entrance fee in the amount of 175 euro.
Sponsorship of profile organizations is most welcome.
The competition
The format of the competition will be based on the Advanced Sommelier Exam conducted by the Court of Master Sommeliers. The format will feature three areas of examination. These areas are Theory, Practical and Blind Tasting.
Only the Judges and the Competitor are to be in the exam room. There are to be NO observers in the testing room.
Theory Testing: The Theory section will consist of a written theory exam. Knowledge in all areas of wine production, laws, viticulture and vinification, as well as spirits, beers, ales, ciders, port and sherry may be tested. The Theory section will have a one-hour time limit.
Practical Skills Testing: The Practical Skills section is a station based service performance exam that may include Decanting, Champagne Service, appropriate glassware choices, blind Spirit Identification of crafted beverages (by nose) and other real world tasks. The Practical Skills section is characterized by a reasonable time limit at each task station. It is a roleplaying exercise requiring full restaurant service skills, composure, dress and personal equipment.
Blind Tasting: The Blind Tasting section is a timed (twenty-five minutes) double blind tasting of six wines. Scoring will be done on the Master Sommelier deductive tasting method. Scores will be assigned for assessment by sight, nose, and palate and by initial and final conclusions of each wine.
