 FIRST CHAPITRE DE MOSCOW

 

 

 

On October 9, 2010, the Baltschug Kempinski Moscow Hotel was the site of a gala dinner in honor of the Chaine des Rotisseurs First Moscow Chapitre.

 

 

Dr. Antti Hemmi, Bailli Delegue of Finland, presided over the traditional ceremony of induction of new members.He was assisted by Henri Everaars, Bailli Delegue de Russie. The menu by Baltschug Hotel’s executive chef Elmar Basziszta was truly unique. In fact the menu was reminiscent of the dinner for the coronation of the last Tsar of Russia Nicholas II. Galantine of Baby Chicken on mesculin drizzled with 100‑year-old balsamic was followed by a cup of essence of pheasant and Xeres with breast of pheasant, pike and freshwater crayfish lasagna, medallions of milk fed veal on a bed of chanterelles accompanied by baby vegetables and truffled heirloom purple Peruvian potatoes. Truly a meal fit for royalty!

 

The credit for the ideal choice of exclusive wines to accompany each of the dinner’s gastronomic masterpieces goes to Ksenia Karpenko, the only female Maitre Sommelier in Russia.
